Well, with Vegeta going SSJ Blue Ascended/2, you would think he would be stronger as he passed his limits beyond SSJ Blue. However, Saitama as we all seen from the anime One Punch Man has been seen to take on enemies w/o having to be serious during his fights(Except the last episode of course.) His strength as we know is unbelievably above the charts, but we don't know for sure how strong Saitama really is. He hasn't really shown his true power, now has he? Vegeta may have shown strength far powerful than we've usually seen in his other forms, but we know there's a limit still. So as I'm trying to say is that Saitama will have the upper hand against the new form Vegeta. (Of course my opinion..don't hurt me!)

In Fact, I think this fight is unpredictable, Vegeta has strong pride (can evolve while fighting). In Vegeta SSJ blue 2 form it can be difficult to Saitama, because it surpass a power of God, but on the other side, we didn`t see the true form/power of Saitama.
I would bet on Vegeta, is risky and personal on my part, for even though he surpassed the power of a god in the dragonball world, the only problem is how a god equals to a unknown Saitama's power.
