mug cake and mochi

Posted 02-04-2018 at 01:50 AM by Pidge

these are are not my recipes i found them online.

this is for the mug cake.

  • 4 tbsp (30 grams) all purpose flour
  • 1 tsp high quality matcha powder
  • 1/4 tsp baking powder
  • 1 tbsp (12.5 grams) granulated white sugar (add more if you prefer a sweeter dessert)
  • 3 tbsp (45 ml) nonfat milk
  • 1/2 tbsp (7.5 ml) vegetable oil

  1. In a microwave-safe mug, add flour, matcha powder, baking powder and sugar. Whisk until evenly blended and no lumps remain. You want to make sure to break apart any matcha or flour lumps before adding the liquid.
  2. Add in milk and oil. Mix with whisk until batter is smooth and uniform in color. Cook in the microwave at full power for about 1 minute. Let cake cool for a few minutes before eating.

  • 1 cup Glutinous Sweet White Rice Flour
  • 1 cup coconut milk
  • 2 tablespoons matcha
  • 1/2 cup sugar
  • 2 tablespoons butter melted
  • 1 teaspoon baking powder

  1. Preheat the oven to 325.
  2. Spray baking dish with non-stick spray. (I use coconut oil spray.)
  3. Mix all dry ingredients including sugar.
  4. Whisk to blend.
  5. Add melted butter and coconut milk.
  6. Stir well.
  7. Put into a baking dish. I used an 8x8 pan.
  8. Bake for 20 minutes or until done in the middle.
